Espresso

Why Ratio Matters

Caffeine is highly water-soluble and dissolves within the first 30 seconds of brewing. The limiting factor isn’t temperature or pressure – it’s how much water contacts the coffee.

Espresso uses roughly 36mL of water per 18g of coffee (1:2). That’s concentrated, but the small volume only extracts about 70% of the available caffeine. Pour over uses around 240mL per 15g (1:16) – more dilute, but the greater water volume extracts up to 90%.

This is why espresso feels stronger per sip, but a full cup of filter coffee delivers more total caffeine. Cold brew compensates for its low water temperature with 6–7 hours of contact time, achieving high extraction despite the cold.
